Ingredients

1/2 onion , chopped
2 chopped green onions
2 tablespoons chopped fresh parsley
2 tablespoons chopped fresh dill
1/2 teaspoon salt

50 ounces frozen chopped spinach ( defrosted drained & thoroughly squeezed of all water )
3 eggs , beaten
4 ounces cottage cheese
6 ounces feta cheese , crumbled
6 ounces neufchatel cheese , softened ( or cream cheese )
16 sheets phyllo pastry dough , sheets
nonstick cooking spray ( butter flavored )
2 tablespoons butter , melted

Instructions

1.Preheat oven to 375°F.
2.In a large bowl, combine onion, green onions, parsley, dill, salt and pepper.
3.Add drained spinach, eggs, cottage cheese, feta cheese, and neufchatel cheese. Mix thoroughly.
4.Layer two sheets of phyllo pastry and spray each sheet with nonstick cooking spray.
5.Place about 1 cup of spinach mixture in an even row about 2 inches from the bottom of the phyllo sheets. Roll the pastry away from you until the filling is completely covered.
6.Repeat with remaining ingredients to make 8 logs total.
7.Brush each with melted butter and place on greased baking sheet.
8.Bake for 30-40 minutes, or until golden brown.
