Ingredients

1 1/2 lbs beef stew meat , cut into 1-inch cubes
2 tablespoons flour
salt and pepper ( to taste )
1 -2 tablespoon vegetable oil
1 packet spiced apple cider
3 cups water
26 ounces beef stock ( or broth )
2 tablespoons apple cider vinegar
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried thyme
1 large potato , peeled and cubed
12 baby carrots , cut into 1/2-inch pieces
2 stalks celery , cut into 1/2-inch pieces
1 medium onion , cut into 1/2-inch pieces
1/4 cup flour
1/2 cup cold water
1 1/2 cups flour ( for self-rising flour , omit baking powder and salt )
2 teaspoons baking powder
3/4 teaspoon salt
3 tablespoons shortening
3/4 cup milk

Instructions

1.In a mixing bowl, add the beef stew meat along with 2 tablespoons of flour, salt and pepper, mix until well coated.
2.Heat oil in a large pot over medium heat, add meat and cook until browned on all sides, about 5-8 minutes.
3.Add spiced apple cider, water, beef stock, cider vinegar, salt, pepper, and thyme to the pot, stir to combine and bring to a boil.
4.Reduce heat to low and cook for 1 hour.
5.Add potatoes, carrots, celery, and onion, cover, and simmer until the vegetables are tender, about 45 minutes.
6.In a small bowl, mix 1/4 cup of flour with 1/2 cup of cold water, add into the stew and stir until well combined.
7.In another mixing bowl, sift 1 1/2 cups of flour, baking powder, and salt. Add shortening and mix until crumbly. Add 3/4 cup of milk and mix until smooth.
8.Use a spoon to drop 8 scoops of batter onto the simmering stew, cover and cook for an additional 15 minutes or until dumplings are cooked through.
