3 chicken breasts
4 cans tomato sauce
4 teaspoons chicken bouillon
2 large onions
2 -4 chipotle chiles in adobo
2 tablespoons olive oil
Tinga Salad is a Mexican dish that combines a spicy tomato chicken tinga with fresh lettuce, avocado and other vegetables. It was originally a braised chicken dish, but this salad version provides a healthier option without compromising on flavor. Instructions

1.Preheat the oven to 375°F (190°C).
2.Season the chicken breasts with salt and pepper and place them in a baking dish. Bake for 25-30 minutes or until fully cooked, then set aside to cool.
3.Heat olive oil in a pan and sauté the onions until softened. Add in the chipotle chiles, tomato sauce and chicken bouillon, then simmer for 10-15 minutes.
4.Shred the chicken and add it to the tomato sauce mixture, stirring to coat the chicken.
5.In a large bowl, add the lettuce, avocado, cherry tomatoes and corn. Top with the chicken tinga mixture, then add a dollop of sour cream and sprinkle with cilantro.
