Ingredients

4 lbs pork shoulder
2 cups chicken stock
2 cans whole tomatoes
6 garlic cloves
3 dried ancho peppers
3 dried mild chile peppers ( casabell chiles . not recognized by zaar )
1 can chipotle chiles in adobo
1 lb tomatillo
3 large onions ( frenched )
4 tablespoons unsalted butter
1 bottle beer
1 1/2 teaspoons kosher salt

Instructions

1.Preheat the oven to 375°F.
2.Season the pork shoulder with salt and place it in a roasting pan. Add in the chicken stock and cover with aluminum foil.
3.Roast it in the oven for about 2 hours until it's cooked through and tender.
4.Remove the pork from the oven and let it cool. Once it's cooled down, shred the pork into small pieces.
5.In a blender, puree the whole tomatoes, garlic, ancho peppers, mild chile peppers, chipotle chiles in adobo, and tomatillo until smooth.
6.In a large pot, heat the butter over medium heat. Add the onions and cook until they're soft and translucent.
7.Add in the pureed chili mixture and cook for another 10 minutes.
8.Pour in the beer and let it simmer for another 10 minutes.
9.Add in the shredded pork and let it simmer for another 5-10 minutes.
10.Serve hot with tortillas or rice, garnished with chopped cilantro and diced onions.
