2 sweet potatoes , scrubbed
6 tomato flavored tortillas
2 cups shredded sharp Cheddar cheese , divided
1 can black beans , rinsed and drained , divided
1 cup salsa ( optional )

Instructions

1.Preheat the oven to 400 degrees F (200 degrees C).
2.Pierce the sweet potatoes all over with a fork, then place them on a baking sheet.
3.Bake for 45 to 60 minutes, or until completely tender.
4.Remove the sweet potatoes from the oven and let them cool until they can be handled.
5.Cut the sweet potatoes in half lengthwise, then scoop the flesh into a bowl.
6.Mash the potatoes with a fork, then set aside.
7.Heat a large skillet over medium heat.
8.Place one tortilla in the skillet and sprinkle with 1/4 cup of cheese.
9.Arrange 1/4 of the black beans and 1/4 of the mashed sweet potato over the cheese.
10.Sprinkle with another 1/4 cup of cheese, then place another tortilla on top.
11.Cook for 2 to 3 minutes on each side, or until the cheese is melted and the tortilla is crispy.
12.Repeat with the remaining ingredients to make three more quesadillas.
13.Cut the quesadillas into wedges and serve with salsa, if desired.
