Ingredients

2 cups basmati rice
1/2 teaspoon saffron thread
2 tablespoons rose water
1/3 cup oil ( or ghee or butter )
1/4 cup blanched slivered almond ( do n't leave these out please )
1 medium onion , finely chopped
275 g ground lamb or 275 g beef
1 teaspoon baharat mixed spice ( Baharat Aka Middle East Mixed Spices - the Real Mix )
sea salt , to taste
2 1/4 tablespoons tomato paste ( optional , see introduction )
1/4 cup raisins
3 cups chicken stock ( I use Emirati Style Yellow Chicken Stock )
Timman Z'affaran, also known as Iraqi Saffron Rice with Meat, is a popular rice dish in the Middle East known for its vibrant yellow color and aromatic flavor. The dish is flavored with saffron, a spice that is native to Iran and known for its distinct aroma and flavor. Instructions

1.Rinse the rice well in cold water, until the water runs clear, and set aside.
2.Warm up the saffron threads in a pan, then add 2 tablespoons of hot water until they dissolve.
3.Add rose water to the saffron and mix well, then set aside.
4.Heat oil in a large saucepan, then add almonds and fry until golden.
5.Remove almonds and set aside to use as a garnish.
6.Add onions to the same saucepan and fry until they are light brown.
7.Add ground meat to the onions and cook until brown.
8.Add baharat mixed spice, salt, tomato paste, and raisins and stir well.
9.Add the rinsed Basmati rice into the meat mixture and stir for a minute.
10.Add 3 cups of chicken stock, the saffron and rosewater mixture, and stir well.
11.Bring the mixture to a boil, then reduce heat to low and cover the saucepan.
12.Cook for 25-30 minutes, or until the rice is tender and all the liquid is absorbed.
13.Serve with the fried almonds on top.
