Ingredients

1 large eggplant
3 tablespoons olive oil
1 large onion , chopped
2 garlic cloves , minced
3 tablespoons tomato paste
1/4 teaspoon fresh ground allspice
1 teaspoon cinnamon
coarse salt
fresh ground black pepper
1 1/4 lbs lean ground lamb
1 teaspoon paprika ( or to taste )
2 tablespoons tomato paste

Instructions

1.Preheat the oven to 400°F.

7.In a greased muffin tin or individual ramekins, begin layering the eggplant slices and lamb mixture into a timbale.
8.Top the timbale with more eggplant slices and bake for 25-30 minutes, or until the eggplant is fully cooked and the top is golden brown.
9.Remove from the oven and let cool for 5 minutes. Remove timbale from ramekins and serve.
