Instructions

1.Preheat oven to 350 degrees F (175 degrees C).
2.In a medium-sized mixing bowl, combine all-purpose flour, whole wheat flour, almond meal, white sugar, lemon zest, and salt.
3.Cut butter into small pieces and add to flour mixture. Work in butter using your fingers until mixture resembles coarse crumbs.
4.Add buttermilk one tablespoon at a time, mixing until dough comes together.
5.Press dough into tart pan, trimming any excess dough from edges.
6.In a separate bowl, whisk together egg yolks, white sugar, and cornstarch.
7.In a medium-sized saucepan, heat milk and basil sprigs over medium heat until steamy. Strain out basil leaves and discard.
8.Gradually whisk milk into egg yolk mixture and return to saucepan. Cook mixture over medium heat, whisking constantly, until thickened.
9.Stir in vanilla extract and pour mixture into crust.
10.Layer sliced apricots over top of custard and brush with apricot jam. Bake for 45-50 minutes or until crust is golden brown. Cool before serving.
