Ingredients

2 small eggplants
2 tablespoons coarse cooking salt ( see Notes below )
1 kg medium tomatoes , peeled , seeded , finely chopped
1 medium brown onions ( for Australians,150g ) or 1 medium yellow onion , finely chopped ( for Americans , just under 5oz )
2 trimmed celery ribs , finely chopped
2 garlic cloves , finely chopped
1 tablespoon fresh oregano , finely chopped ( see Notes below )
1 tablespoon fresh flat-leaf parsley , finely chopped ( see Notes below )
1 kg sebago potato , peeled
1/4 cup olive oil
2 tablespoons fresh oregano leaves ( see Notes below )
Tiella is a traditional dish from the Puglia region of Italy, where it's often served as a main course alongside a simple salad or crusty bread. This casserole is made with layers of eggplant, tomato, celery, and potato, all baked together until soft and creamy. Tiella is a great way to use an abundance of summer vegetables, and it's perfect for feeding a crowd. The addition of fresh herbs like oregano and parsley adds a burst of flavor to this comforting and hearty dish.

Instructions

1.Preheat oven to 350°F (175°C).
2.Slice the eggplants into 1/4 inch rounds and sprinkle with salt. Leave them to sit for 30 minutes and then rinse with cold water to remove the salt.
3.Heat the olive oil in a large skillet over medium-high heat. Add onion and celery and sauté until they become soft.
4.Add garlic, oregano, and parsley and cook until fragrant.
5.Add the tomatoes and cook until they break down and release their liquid.
6.Slice the potatoes into thin rounds and set them aside.
7.Layer one-third of the tomato mixture in the bottom of a large baking dish. Then add one-third of the sliced eggplant and potatoes. Repeat these layers two more times.
8.Cover the top layer of the potatoes with the remaining tomato mixture and sprinkle fresh oregano leaves on top.
9.Cover the baking dish with foil and bake for an hour.
10.Remove the foil and bake a further 25-30 minutes until the vegetables are soft and the top is golden.
