Ingredients

1 eggplant , sliced
salt
2 onions , thinly sliced
2 sweet red peppers , seeded and sliced
4 garlic cloves , minced
6 tablespoons olive oil , divided
2 large zucchini
3 large tomatoes
fresh ground black pepper
1 teaspoon dried thyme
1 teaspoon dried rosemary
3 tablespoons breadcrumbs
2 tablespoons parmesan cheese , grated
Tian is a classic Provencal dish that is made of layered vegetables baked with olive oil and herbs. This dish is a great way to use up extra summer vegetables from your garden or farmers' market. The recipe includes eggplants, onions, sweet red peppers, zucchinis, and tomatoes, all of which are roasted to perfection in the oven. The breadcrumb and parmesan cheese topping adds a satisfying crunch to this delicious vegetarian dish, making it a perfect side dish for any meal. Instructions

1.Preheat oven to 375F.
2.Layer eggplant slices in a colander, lightly salting each layer, top with a plate, and let sit for 30 minutes until moisture is released. Pat dry with paper towels.
3.In a skillet, saute onions, sweet red peppers, and garlic in 3 tablespoons of olive oil until softened.
4.Slice zucchinis, tomatoes into thin rounds and drizzle the remaining olive oil at the bottom of a 9-inch casserole dish.
5.Layer the vegetables alternately in a circular pattern on top of the drizzled olive oil, seasoning each vegetable layer with salt, black pepper, dried thyme, and dried rosemary. Finish with sautéed onions, sweet red peppers, and garlic on top of the vegetables.
6.Mix breadcrumbs with grated parmesan cheese and spread evenly over the top of the vegetables.
7.Bake for 45-50 minutes or until the breadcrumbs are golden brown and the vegetables are tender.
