Ingredients

2 -3 potatoes , white ( You can peel or not , depending on preference )
4 tablespoons olive oil , divided
salt and pepper
2 lbs mustard greens , Chinese gai choy ( about 1 large bunch )
5 garlic cloves , peeled and sliced
1 cup vegetable broth or 1 cup chicken broth
1/4 teaspoon red pepper flakes ( optional )
4 tablespoons parmesan cheese , grated ( optional )

Instructions

1.Preheat oven to 425°F (220°C).

12.Serve hot, garnished with additional parmesan cheese if desired.
