Ingredients

6 tablespoons olive oil
3 onions , thinly sliced
2 lbs zucchini , thinly sliced ( or other summer squash )
2 lbs tomatoes , thinly sliced
2 teaspoons thyme
salt and pepper

Instructions

1.Preheat the oven to 400°F.
2.In a large skillet, heat 3 tablespoons of olive oil over medium heat.
3.Add the thinly sliced onions and cook until they become caramelized and tender. This should take about 15 minutes.
4.In the same skillet, add the thinly sliced zucchini and cook for another 5 minutes.
5.Arrange the caramelized onions and zucchini in a baking dish.
6.Layer thinly sliced tomatoes over the zucchini and onions.
7.Sprinkle thyme, salt, and pepper over the tomatoes. Drizzle 3 tablespoons of olive oil over the tomato layer.
8.Cover the dish with aluminum foil and bake for 45 minutes.
9.Remove the foil and continue to bake for another 15 minutes or until the top is browned.
10.Serve hot or at room temperature.
