Ingredients

1 1/2 cups water
1 tablespoon olive oil
1/2 teaspoon salt
1 cup uncooked Bulgar wheat
1 large tomatoes , seeded and diced
1/4 cup sliced green onion
1 cup snipped fresh parsley
2 tablespoons snipped of fresh mint ( optional )
1 -2 lemon
Tia Gwen's Tabbouleh is a classic Middle Eastern dish made with Bulgur wheat, tomatoes, and fresh herbs. This refreshing salad is perfect for summer and is an excellent addition to any barbecue or potluck. It's a light and nutritious dish that can easily become a meal with the addition of protein like grilled chicken or tofu. It's also an excellent source of plant-based protein, making it perfect for vegetarians and vegans alike. Instructions

1.In a medium saucepan, bring water, olive oil, and salt to a boil.
2.Add the Bulgur wheat and stir.
3.Cover the saucepan and remove it from the heat.
4.Allow the Bulgur wheat to sit for about 25-30 minutes or until the water is absorbed.
5.Fluff the Bulgur wheat with a fork and transfer it to a large mixing bowl.
6.Add diced tomatoes, sliced green onions, snipped fresh parsley, and snipped fresh mint to the mixing bowl.
7.Squeeze lemon juice over the vegetables and stir all the ingredients until well-combined.
8.Cover the bowl and refrigerate for at least 2 hours to let the flavors combine.
9.Once the Tabbouleh is chilled, season it with salt and pepper to taste and enjoy!
