Ingredients

7 anaheim chilies , with stems
5 egg whites
5 egg yolks
4 cups flour
1 1/2 teaspoons salt ( to taste )
1 1/2 teaspoons pepper ( to taste )
1 1/3 tablespoons cream of tartar ( powder )
7 rectangular slices colby-monterey jack cheese ( size of half a string cheese )
5 cups oil , to allow peppers to fry ( depends on the pan being used )

Instructions

1.Roast the chilies on an open flame on the stovetop until the skin is charred.
2.Transfer the roasted chilies to a ziplock bag or cover with a damp cloth for 10 minutes. This helps to steam the chilies, making it easy to remove the skin.
3.Peel the skin off the chilies and slit each one lengthwise. Remove the seeds and veins from the chilies.
4.Stuff each chili with a slice of colby-monterey jack cheese. Close the chili by pressing the edges of the chili together.
5.Separate the egg yolks and whites and set aside.
6.In a mixing bowl, whisk the egg whites with cream of tartar until stiff peaks are formed.
7.In a separate mixing bowl, whisk the egg yolks until light and frothy.
8.Fold the egg whites and yolks together until there are no white streaks visible.
9.In a separate mixing bowl, mix flour, salt, and pepper together.
10.Add the flour mix to the egg mix, whisk until there are no lumps.
11.In a deep-frying pan or wok, heat the oil to 375°F (190°C) on medium heat.
12.Dip each stuffed chili into the egg mix, making sure it is well coated, and then gently place them in the hot oil.
13.Fry each chili until golden brown and crispy.
14.Drain excess oil by placing the chilies on a paper towel to absorb the oil.
15.Serve hot with your favorite salsa and enjoy!
