13 1/2 lbs venison
6 1/2 lbs beef fat

5/8 cup mustard seeds
1 1/2 cups tender quick
7 1/2 cups warm water

1 1/2 tablespoons basil
1 1/2 tablespoons Accent seasoning
1 tablespoon onion powder
1 teaspoon lemon pepper
3/4 tablespoon clove
3 1/2 tablespoons liquid smoke
One of Germany's most famous foods, Thuringer sausages have been around for over 200 years. They got their name from the Thuringia region in the country where they were first made. The sausages are now a popular dish in Germany, the United States, and around the world. Instructions

1.In a large mixing bowl, combine venison, beef fat, garlic, pepper, and mustard seeds.
2.Mix tender quick and warm water in a separate bowl and add it to the first bowl.
3.Add allspice, oregano, basil, Accent seasoning, onion powder, lemon pepper, clove, and liquid smoke to the mixture. Mix well.
4.Cover the bowl and refrigerate overnight.
5.The next day, stuff the mixture into casings and smoke them.
6.Preheat an oven to 170°F and put the sausages on a wire rack.
7.Let them cook for 6-7 hours, then cool and store in the refrigerator.
