3 tablespoons Cajun-style seasoning
1 1/2 tablespoons butter
2 yellow onions , finely chopped
2 banana ( or hot ) peppers , seeded and chopped
2 celery ribs , finely chopped
6 cloves garlic , minced
1 shallot , minced
3 cups long grain white rice
1 1/2 tablespoons butter
3 cups chicken stock
1 can tomato sauce
1 can diced tomatoes with mild green chilies , undrained
1 can or bottle beer
salt to taste
1 cup frozen corn kernels , thawed

Instructions

1.Preheat oven to 375°F (190°C).

3.Heat 3 tablespoons canola oil in a large Dutch oven over medium-high heat until hot.
4.Add andouille sausage, chicken chunks, and 3 tablespoons Cajun-style seasoning. Cook for 8-10 minutes or until lightly browned and cooked through.
5.Remove the sausage and chicken to a plate and set aside.
6.Reduce heat to medium and add 1 1/2 tablespoons butter, yellow onions, banana peppers, celery ribs, garlic, and shallot to the Dutch oven. Cook for 5-6 minutes or until vegetables are tender.
7.Add 3 cups long grain white rice and 1 1/2 tablespoons butter. Cook for 2-3 minutes or until rice is slightly toasted.
8.Add 3 cups chicken stock, can of tomato sauce, can of diced tomatoes with mild green chilies, can of beer, salt to taste, and frozen corn kernels. Stir well.
9.Add the cooked sausage and chicken back into the pot. Stir well and bring to a boil over high heat.
10.Cover with a tight-fitting lid and bake in preheated oven for 25 minutes.
11.Remove pot from the oven and stir well. Cover and let sit for 5-10 minutes.
