The Three King's Ring or Tres Reyes, as it is popularly known, is traditionally eaten on the night of January 5th in Spain, and is a customary part of the celebrations of the Epiphany. With candied fruits and almonds studded throughout the soft, sweet dough, and a dusting of powdered sugar on top, this pastry is a classic treat for the holiday season. It's not only beautiful, but it also tastes amazing, and it's a great dessert recipe for any family gathering.

Instructions

.In a large mixing bowl, combine 1 1/4 cups flour and the yeast.
.In a saucepan, heat and stir milk, butter, granulated sugar, and salt until warm and butter almost melts. Add to flour mixture; add eggs. Beat with an electric mixer on low speed for 30 seconds.
.Beat on high speed for 3 minutes. Stir in as much of the remaining flour as you can.
.Turn dough out onto a lightly floured surface. Knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (6 to 8 minutes total). Shape into a ball. Place in a greased bowl, turning once to grease surface. Cover; let rise in a warm place until double in size (45 to 60 minutes).
.Punch dough down. Turn out onto a lightly floured surface. Cover; let rest for 10 minutes. In a small bowl, stir together softened butter, granulated sugar, and cinnamon. Set aside. Grease a baking sheet; set aside. In a medium bowl, combine candied fruit or peel and almonds. Set aside.
.Roll dough into a 30x20-cm rectangle. Spread cinnamon mixture over dough rectangle; sprinkle with fruit and almond mixture. Starting from a long side, roll up dough into a spiral, pinching edge to seal. On a greased baking sheet, shape dough into a ring. Using a sharp knife, make cuts 2.5 cm apart around outside edge of ring, cutting two-thirds of the way through. Twist each 2.5-cm section slightly on its side.
.Cover; let rise in the warm place until nearly double in size (about 30 minutes). Meanwhile, preheat oven to 375F.
.Bake in the preheated oven for 25 to 30 minutes or until golden brown. Remove from oven; cool completely on a wire rack. In a small bowl, stir together powdered sugar, vanilla, and enough orange juice to make of drizzling consistency.
.Drizzle icing over ring; sprinkle with additional cinnamon and finely shredded orange rind (if desired). Serve and enjoy!
