Ingredients

500 g milk cream
1 liter milk
12 egg yolks
80 g sugar
1100 g of black chocolate
18 g unflavored gelatin
900 g whipped cream
550 g white chocolate
9 g unflavored gelatin
450 g whipped cream
500 g bitter chocolate
500 g milk cream
500 g of ground toasted almonds
900 g ganache
Indulge in the richness of Three Chocolate´s Drum, a dessert that will leave your guests asking for more. This dessert is a layer of three types of chocolate, i.e., black, white, and bitter, with a different texture in each layer. Moreover, it is served with ground toasted almonds and ganache, further enhancing the taste and textures. Despite being high in calories, sugar, and fat, this dessert has occasional health benefits due to the antioxidants present in chocolate and the healthy fats in almonds.

Instructions

1.In a large bowl, beat 500g of milk cream until stiff peaks form.
2.In a separate bowl, whisk 12 egg yolks and 80g of sugar until pale in color.
3.In a saucepan, heat 1 liter of milk until hot but not boiling.
4.Slowly pour the hot milk over the egg mixture, whisking continuously.
5.Return the mixture to the saucepan and cook over low heat until it thickens.
6.Remove from heat and add 900g of chopped black chocolate and 18g of unflavored gelatin.
7.Stir until the chocolate and gelatin have melted and mixed well.
8.Fold in the whipped cream and pour into a drum-shaped silicone mold. Freeze for 2 hours.
9.Repeat the process with 550g of white chocolate and 9g of unflavored gelatin, adding the white chocolate mixture on top of the dark chocolate one. Freeze for another 2 hours.
10.Finally, repeat the process with 500g of bitter chocolate and 500g of milk cream, adding the mixture on top of the white chocolate one.
11.Let cool and remove from the mold.
12.Serve with 500g of ground toasted almonds and 900g of ganache.
