1 tablespoon olive oil
1 cup chopped onion
3/4 cup grated carrot
2 tablespoons minced garlic
8 ounces lean ground beef
6 ounces hot Italian sausages , casings removed
1 can crushed tomatoes in puree
1/4 cup tomato paste
1/4 cup chopped fresh basil
1 tablespoon golden brown sugar
1 tablespoon dried oregano
1 bay leaf
1/2 teaspoon dry crushed red pepper
15 oven-ready no-boil lasagna noodles ( about 12 oz . )
2 containers ricotta cheese
1 1/2 cups grated parmesan cheese
10 ounces frozen spinach , thawed , drained & squeezed dry
2 large eggs
2 lbs grated mozzarella cheese

Instructions

1.Preheat oven to 375 F.
2.Heat the olive oil in a large nonstick skillet over medium heat. Add the onion to the pan and cook for 5 minutes until softened.
3.Stir in grated carrot and minced garlic and cook for 2 minutes.
4.Add ground beef and sausage to the pan and cook for 9 minutes or until browned, stirring to crumble the meat.
5.Add crushed tomatoes with puree, tomato paste, chopped fresh basil, golden brown sugar, dried oregano, bay leaf, and crushed red pepper to the pan. Cook for 10-12 minutes or until slightly thick.
6.Remove the bay leaf from the sauce.
7.Coat a 13X9-inch baking dish with cooking spray. Place 5 noodles in the bottom of the baking dish.
8.Combine the ricotta cheese, 1 cup of parmesan cheese, spinach, and eggs in a bowl. Spread 1 cup of ricotta mixture over the noodles in the baking dish.
9.Add a layer of mozzarella cheese over the ricotta mixture.
10.Spoon 1 1/2 cups of meat mixture over the mozzarella cheese.
11.Repeat layers of noodles, ricotta mixture, mozzarella cheese, and meat mixture. Top with the remaining mozzarella and parmesan cheese.
12.Cover with foil and bake for 25 minutes.
13.Remove foil and bake for 25 minutes more or until bubbly.
14.Remove the dish from the oven and let it stand for 10 minutes.
15.Cut into 15 pieces and serve.
