Ingredients

1 medium yellow onion
1 small red bell pepper
4 scallions
1 tablespoon vegetable oil , plus
2 teaspoons vegetable oil
3/4 teaspoon ground cumin
2 1/2 ounces monterey jack cheese
1 1/2 ounces goat cheese , room temperature
1 1/2 ounces cream cheese , room temperature
2 tablespoons salsa ( hot or mild ) or 2 tablespoons taco sauce ( hot or mild )
8 corn tortillas
1 can red chili sauce or ( 10 ounce ) can enchilada sauce
Three-Cheese Enchiladas are a classic Mexican dish that has been loved by people all over the world for many years. It is inspired by the traditional dish of enchiladas, which is a combination of tortilla, sauce, cheese, meat or beans. In this dish, we use three different kinds of cheese, which elevates the flavour profile and colour of the enchiladas. The red chili sauce or enchilada sauce adds a spicy and rich texture to the dish which balances out the creamy and tangy flavour of the cheese. This dish is perfect for any dinner party or gathering, as it can be prepped ahead of time and cooked just before serving.

Instructions

1.Preheat oven to 375°F.
2.Heat 1 tablespoon of oil in a large skillet over medium heat. Add the onion, red bell pepper and scallions and sauté until tender, around 5-7 minutes.
3.Add cumin and stir for another minute.
4.In a mixing bowl, combine the monterey jack, goat cheese, cream cheese, and salsa or taco sauce. Mix well.
5.In a separate small skillet, heat the 2 teaspoons of oil over medium heat.
6.One by one, cook the tortillas in the hot oil, for about 10 seconds, turning occasionally, until softened.
7.Spread 2 tablespoons of the cheese mixture over each tortilla, then roll it up and place seam-side down in a 13 x 9 inch baking dish.
8.Pour the canned chili sauce or enchilada sauce over the top of the enchiladas, and sprinkle with the cheese mixture.
9.Bake the dish in the preheated oven for 20-25 minutes, until bubbly and cheese is melted. Let it cool for 5 minutes before serving.
