1 egg yolk
1/8 cup fine dry breadcrumb

8 pieces monterey jack pepper cheese , about the size of dice

Instructions

1.Preheat the oven to 350 degrees F (175 degrees C).
2.In a large bowl, mix together the lean ground beef, finely chopped onion, liquid smoke, egg yolk, and fine dry breadcrumb. Season with salt and pepper to taste.
3.Take a tablespoon of the beef mixture and flatten it into a small patty on your palm. Place a piece of the monterey jack pepper cheese in the center of the patty and fold the edges of the patty around the cheese, forming a ball.
