Ingredients

1 1/2 quarts kabocha squash ( cut into 1 1/2-in . chunks ) or 1 1/2 quarts orange-colored winter squash , peeled ( cut into 1 1/2-in . chunks )
1 teaspoon salt , divided
3 tablespoons vegetable oil , divided
1 onion , halved cut into half-moons
2 serrano chilies , minced
1 cinnamon stick
20 fresh curry leaves or 6 dried bay leaves
1 teaspoon turmeric
1 teaspoon cumin seed
1 can coconut milk
1 cup cashews , salted roasted
1 tablespoon lemon juice
steamed basmati rice , to serve
Tho Ruung Squash Curry is an Indian-inspired dish that is a great alternative to traditional meat-based curries. Instructions

1.Preheat oven to 400°F and place squash on a baking sheet, drizzle with 2 tbsp of vegetable oil and season with 1/2 tsp of salt. Roast until tender for 30-40 minutes.
2.Heat 1 tbsp of vegetable oil in a medium pot, add onions and bell peppers, cook until softened for about 5 minutes.
3.Add the minced chilies, cinnamon stick, curry leaves, turmeric, cumin seed and 1/2 tsp of salt, cook for another 5 minutes.
4.Add coconut milk and simmer gently for another 10 minutes.
5.Stir in roasted squash, cashews, lemon juice and simmer for another 5 minutes.
6.Serve hot with steamed basmati rice.
