2 lbs pork loin , cubed
2 tablespoons caramel sauce or 2 tablespoons thick soy sauce
1/3 cup fish sauce
2 tablespoons sugar
1 teaspoon five-spice powder
1/2 teaspoon black pepper
1/2 teaspoon white pepper
1 -2 cup chicken stock ( or water )
3 -4 hard-boiled eggs
1 cup sugar

1/4 cup hot water
1 teaspoon lemon juice

Instructions

1.In a large pot, heat the oil over medium-high heat, and fry garlic, shallots, and lemongrass until fragrant.
2.Add the pork and stir fry until it turns golden brown.
3.Mix in the caramel or thick soy sauce, sugar, fish sauce, five-spice powder, black pepper, and white pepper. Stir to coat the pork well.
4.Pour in the coconut juice and enough chicken stock or water to cover the pork completely. Bring to a boil, then reduce to a simmer, and continue cooking until the pork is tender, about 45 minutes to 1 hour.
5.Once the pork is tender, add the hard-boiled eggs to the pot and simmer for another 5 to 10 minutes until the eggs are heated through.
