1 fennel , sliced into 8 wedges
2 medium carrots , peeled and quartered
1 large white russet potato , peeled and cut into 12 wedges
1 large white onion , peeled and cut into 8 wedges
4 garlic cloves , peeled and crushed
2 tablespoons oil
1/4 - 1/2 teaspoon salt
1/4 - 1/2 teaspoon fresh cracked pepper
1 tablespoon olive oil
8 ounces button mushrooms , sliced
1 garlic clove , minced
1 tablespoon green peppercorn
2 tablespoons butter
2 tablespoons flour
1 cup chicken stock or 1 cup vegetable stock
1/2 cup milk
2 ounces monterey jack cheese , cubed ( if you can find a mushroom jack that 's very good )
1/2 white wine
16 ounces puff pastry sheets ( Kineret pre cut 8 squares )
1 egg , wash
1/2 teaspoon poppy seed
1/2 teaspoon sesame seeds
1/4 teaspoon garlic salt

Instructions

1.Preheat the oven to 375 degrees Fahrenheit.
2.Toss the fennel, carrots, potato, white onion, and crushed garlic in a bowl with oil, salt, and pepper. Spread the vegetables on a sheet pan.
3.Roast for 25-30 minutes until the vegetables are tender and golden brown.
4.In a skillet over medium-high heat, heat the olive oil, add the sliced mushrooms, minced garlic, green peppercorn, and sauté.
5.Once cooked, add the butter and flour. Cook for 1-2 minutes while stirring.
6.Gradually add the chicken or vegetable stock, then the milk, stirring constantly until desired thickness is attained. Stir in the cubed cheese and white wine.
7.On a floured surface, roll out the puff pastry to 1/8 inch thickness. Cut into 4 equal pieces. Place 1 heaping tbsp of the mushroom sauce in the center of each piece.
8.Place the roasted vegetables on top of the sauce. Repeat until you have 3 layers. Roll out 1 more puff pastry to 1/8 inch thickness. Cut it into 4 equal pieces and place it on top of the last layer.
9.Pinch together the edges of the puff pastry to seal and brush the egg wash on top. Sprinkle with the poppy seed, sesame seed, and garlic salt.
10.Bake in preheated 375-degree oven for 25-30 minutes until golden brown. Serve and enjoy.
