Belgian Lemon Teacake is a simple and delicious dessert that is a favorite in Belgium and other European countries. Instructions

1.Preheat your oven to 180C and grease a cake tin.
2.Add the butter, self-raising flour, sugar, egg, and lemon juice into your Thermomix, then combine the ingredients for 30 seconds on the speed 4 setting.
3.Scrape down the sides of the bowl and mix again for a further 10 seconds.
4.Pour the cake batter into the greased pan and bake it for 25-30 minutes.
5.In the meantime, add the sugar and egg into your Thermomix and mix the ingredients together for 1 minute at the speed 1 setting.
6.Add the lemon juice and melted butter, then cook the mixture for a further 3 minutes at 90C on the speed 2 setting.
7.Once the cake is baked, let it cool for 5 minutes before pouring the lemon syrup over it.
8.Serve warm or at room temperature.
