Ingredients

700 g aubergines
25 ml whole milk
25 ml double cream
75 g butter
1 nutmeg , grated
1 tablespoon flat leaf parsley , finely chopped
sea salt , to taste
fresh ground pepper , to taste
Theodore Kyriakou’s Warm Purée of Aubergine is a delicious and healthy appetizer that originates from the Mediterranean region. Instructions

1.Preheat oven to 220°C.
2.Using a fork, prickle the aubergines in several places.
3.On an ovenproof dish, roast the aubergines for 60 minutes, or until the skins become black and start to come off.
4.Take out of the oven and let them cool down.
5.Cut the aubergines in half and scoop out the soft flesh into a bowl.
6.Mash the aubergine flesh with a fork until smooth.
7.In a small pan, heat the milk and the cream.
8.In a blender, blend the mashed aubergines with the hot milk-cream until you have a smooth mixture.
9.Put the mixture back into the pan and add the butter, nutmeg, salt, and pepper.
10.Cook the mixture for about 5 minutes over low heat until all ingredients are incorporated and the butter has given a shiny look to the mixture.
11.Garnish with chopped parsley and serve warm with pitta bread or as a side dish with grilled meat.
