Tourtiere is a classic French-Canadian meat pie that is traditionally served during Christmas and New Year's celebrations. This savory pie is made with a flavorful combination of ground pork, onions, celery, and spices, all encased in a flaky double crust pastry. While this recipe is often associated with Quebec cuisine, it is beloved across Canada and is enjoyed as a comforting meal all throughout the winter months. The Ultimate Tourtiere recipe provides a simple and easy way to enjoy this classic dish at home. Serve it with a side of green salad or cranberry sauce for a festive touch.

Instructions

1.In a large skillet over medium heat, cook the ground pork until browned and crumbly. Drain excess fat.
2.Add water, onion, celery, garlic, salt, savory, thyme, pepper, cloves, and bay leaf. Simmer until the vegetables are tender and the mixture has thickened (approximately 35 minutes), stirring occasionally.
3.Remove the bay leaf and stir in the mashed potatoes. Allow to cool slightly.
4.Preheat your oven to 425°F.
5.Line a 9-inch pie plate with pastry. Pour the cooled meat filling into the pie crust. Moisten the edges of the dough with water, then place the top crust over the filling. Trim and crimp the edges to seal. Cut a few slits in the top crust to allow steam to escape.
6.Lightly beat the egg yolk and milk together and brush on the top crust. Bake for 15 minutes. Reduce heat to 375°F and continue baking for 20-25 minutes, or until crust is golden brown. Let stand for 10 minutes before serving.
