Ingredients

1 tablespoon vegetable oil
2 teaspoons vegetable oil , divided
2 cups diced onions
2 -3 large carrots , peeled and cut in half lengthwise and then across into 1-inch chunks
1/2 bunch fresh celery , chopped ( about 1 1/2 cups )
2 garlic cloves , minced
2 1/4 lbs beef chuck roast , trimmed and cut into 1-inch pieces
salt and pepper , to taste
2/3 cup white wine , divided
1 cup canned low sodium chicken broth , divided
2 tablespoons Worcestershire sauce
1 1/2 teaspoons fresh thyme , minced and divided
2 tablespoons fresh rosemary , minced and divided
1/4 cup cornstarch
2 1/2 lbs russet potatoes , unpeeled and scrubbed
1/4 cup butter
6 garlic cloves , minced
salt and pepper , to taste
Shepherd's Pie is a classic British dish that originated in the 18th century. It was originally made with leftover roast meat, usually lamb, which was minced and mixed with vegetables, then topped with mashed potato and baked until crispy and golden. Nowadays, Shepherd's Pie is commonly made with beef, but the basic recipe remains the same. This dish is a staple in many British homes and can be found on most pub menus. The Shakespeare Tavern's Shepherd's Pie is an easy-to-follow recipe that is delicious and comforting. The beef is cooked until tender and mixed with flavorful vegetables, while the mashed potatoes on top create a crispy crust when baked in the oven. Instructions

1.Preheat oven to 375°F.
2.Heat 1 tablespoon of oil in a large Dutch oven over medium-high heat. Add onions and sauté, stirring occasionally, for 5 minutes.
3.Add 1 teaspoon of oil to the Dutch oven with carrots, celery, and minced garlic to the softened onions and continue cooking for 5 more minutes until the vegetables begin to soften.
4.In a separate pan, heat the remaining teaspoon of oil over high heat. Sear the beef until brown on all sides in the pan.
5.Season the beef with salt and pepper and add to the Dutch oven with fresh thyme, rosemary, Worcestershire sauce, 1/3 cup of wine, and 1/2 cup of chicken broth. Stir well and bring to a boil.
6.In a small bowl, whisk together cornstarch and 1/2 cup of chicken broth until smooth. Add the cornstarch mixture to the Dutch oven and stir well to combine.
7.Cover Dutch oven and place in preheated oven. Cook for 1 hour or until beef is tender.
8.Peel and slice the potatoes into 1/4-inch slices. Place in a large pot filled with salted water, bring to a boil and cook for 15 minutes or until soft.
9.Drain the potatoes and add butter, minced garlic, and salt and pepper. Mash the potatoes until smooth.
10.Once the beef is cooked, remove from the oven and carefully place mashed potatoes on top of the beef mixture.
11.Increase oven temperature to 400°F. Cook Shepherd's Pie for 20-25 minutes until the top is browned and bubbly. Serve hot!
