Instructions

1.Preheat the oven to 325°F (165°C) and line a baking sheet with parchment paper.
2.In a large bowl, mix together the finely ground walnuts, egg yolks, white sugar, ground cardamom, baking soda, and rose water until well combined.
3.Take a tablespoonful of the mixture and roll it into a ball between your palms. Place the ball on the prepared baking sheet and press it down slightly to form a disc shape.
4.Repeat this process with the remaining mixture, leaving about 1 inch between each cookie.
5.In a small bowl, mix together the remaining egg yolk and water to make an egg wash.
6.Brush the egg wash over the top of each cookie and then press a walnut piece into the center of each one.
7.Bake the cookies for 12-15 minutes, until golden brown.
8.Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
