Ingredients

1 1/4 lbs boneless skinless chicken breasts
2 tablespoons olive oil , divided
1 1/2 tablespoons lemon pepper , rub
3 cans 33 % reduced-sodium chicken broth ( about 6 cups )
1/2 medium onion
12 ounces uncooked angel hair pasta
1 lemon
2 ounces cream cheese , softened ( I use 4 ounces , must be very soft )
1 can quartered artichoke hearts in water , drained
1/4 cup cups capers , drained and rinsed
chopped fresh parsley
grated fresh parmesan cheese
Chicken Piccata Pasta is a flavorful and tangy pasta dish that originated from Italy. The dish is made with chicken breasts and a creamy lemon sauce with capers, artichoke hearts, and angel hair pasta. Instructions

1.Rinse the chicken breasts and pat them dry with paper towels. Cut them into bite-sized pieces and season with lemon pepper rub.
2.In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the seasoned chicken and cook until fully cooked, about 8 to 10 minutes. Remove the chicken from the skillet and set aside.
3.In the same skillet, add the remaining 1 tablespoon of olive oil and sliced onions. Cook until the onions are tender and translucent.
4.Bring the chicken broth to a boil in a medium saucepan. Add the angel hair pasta and cook according to the package instructions.
5.Add the cooked chicken back into the skillet with the onions. Add in the cream cheese, drained artichokes, capers, and a zest of 1 lemon. Mix well and continue to stir until the cheese is fully melted.
6.Drain the cooked angel hair pasta and add it into the skillet with the chicken and artichokes. Mix well and bring to a simmer for 2 to 3 minutes.
7.Serve hot with freshly grated parmesan cheese and chopped parsley on top.
