Ingredients

1 whole orange
16 whole cloves
2 tablespoons brown sugar
1/2 teaspoon ground cinnamon
1/2 teaspoon ground mace or 1/2 teaspoon ground nutmeg

10 fluid ounces water
750 ml ruby port
1 orange , juice of

Instructions

1.Preheat the oven to 180C/160C fan.
2.Stud the whole orange with the cloves, and roast for 30 minutes.

4.In a large saucepan, add the brown sugar, ground cinnamon, ground mace or ground nutmeg, allspice, ground ginger, and water. Stir to combine.
5.Place the saucepan over low heat, stirring occasionally, until the sugar is dissolved. Do not boil the mixture.
6.Stir in the ruby port and orange juice and heat gently until hot. Do not boil.
7.Once the mixture is hot, add the sliced roasted orange. Heat for a few more minutes before serving.
