Ingredients

3 tablespoons olive oil
1 tablespoon salted butter
2 serrano peppers , diced , with seeds ( canned or fresh )
2 chipotle peppers , diced , with a little sauce ( canned in adobo sauce )
1 medium onion , diced
3 tablespoons Wondra Flour ( can go 4 tablespoons )
15 ounces chicken broth ( canned )
6 ounces tomato sauce
5 teaspoons chili powder ( fresh , good quality )
1 1/2 teaspoons sugar ( or honey )
1/4 teaspoon table salt
2 cups tempura flour , mix ( batter , I use Hime brand )
1 1/2 cups water , ICE COLD
12 ounces monterey jack cheese , shredded , brought to room temperature
20 ounces corn oil
6 large anaheim chilies , fresh
Chilies rellenos is a traditional Mexican dish made from fresh chillies stuffed with cheese, then breaded and deep-fried to golden perfection. Instructions

1.In a frying pan, heat olive oil and butter over medium heat, add serrano peppers, chipotle peppers, and onions and stir occasionally until soft, not browned.
2.Add Wondra flour and stir well.
3.Pour chicken broth and stir well.
4.Add tomato sauce, chili powder, sugar, and salt, stir well and bring to a simmer for 10 minutes.
5.In the meantime, carefully stuff each Anaheim chili with the shredded Monterey Jack cheese.
6.Preheat your fryer to 375 degrees F.
7.In a mixing bowl, mix tempura flour and ice-cold water together.
8.Coat each stuffed chili well with the tempura batter, shake off any excess.
9.Deep fry in corn oil on high heat, 2-3 minutes on each side, until golden brown and crispy.
10.Drain on paper towels.
11.Serve with the chili sauce drizzled over the top.
