Ingredients

1/4 cup pearl barley
1 cup water
1 cup heavy cream
salt
1 1/2 lbs veal bones ( or 1 1/2 lbs both veal and chickens ) or 1 1/2 lbs chicken bones ( or 1 1/2 lbs both veal and chickens )
4 1/2 quarts cold water
1 tablespoon salt
1 small carrot
2 turnips
2 leeks
1 onion , stuck with
2 whole cloves
bouquet garni

Instructions

1.Soak the barley in water overnight. Drain the water and rinse the barley
2.In a pot, bring 1 quart of water to a boil. Add the veal/chicken bones and boil for 5-10 minutes until the water becomes cloudy. Drain and rinse the bones.
3.In a large soup pot, add the cleaned bones, 4 1/2 quarts of water, and salt. Bring to a boil and then reduce heat to low.
4.Add the drained barley to the soup and allow it to simmer for 2 hours.
5.Clean and prepare the vegetables by peeling and dicing the carrot and turnips. Clean the leeks and chop off both ends. Peel and insert 2 cloves into the onion. Make a bouquet garni with the herbs.
6.Add the prepared vegetables and bouquet garni. Simmer for 30 minutes and then strain the soup.
7.Add heavy cream to the strained soup and stir. Salt to taste and serve hot.
