6 ounces caster sugar or 6 ounces superfine sugar

Instructions

1.For traditional method:
2.In a heatproof bowl, mix together lemon and orange zest and juice, eggs and sugar.
3.Place the bowl over a pan of simmering water, making sure the bottom of the bowl is not touching the water.
4.Add the butter and stir the mixture intermittently until the butter has melted and the mixture thickens. It usually takes 10-15 minutes.
5.Pour the lemon curd into sterilised jars and seal.

7.Grease the crockpot pot with butter.
8.In a bowl mix together the lemon and orange zest and juice, eggs and sugar.
9.Transfer the mixture to the crockpot pot.
10.Add the butter and stir well.
11.Place a clean dishcloth on the bottom of the crockpot and place the pot on it. This will prevent cracks from happening.
12.Cook on low heat for 2-2.5 hours until the mixture thickens and has a slightly wobbly texture.
13.Spoon the lemon curd into sterilised jars and seal.
