Ingredients

1/3 lb asparagus
1/3 lb carrot
1/3 lb bamboo shoot
6 large dried Chinese mushrooms
1/2 lb Chinese cabbage or 1/2 lb green cabbage
oil
2 tablespoons butter
2 tablespoons sesame oil
1/2 teaspoon salt
2 tablespoons soy sauce
1 tablespoon soybean paste
1 tablespoon hoisin sauce
2 teaspoons sugar
4 tablespoons vegetable broth
2 tablespoons sherry wine
12 ounces bean curd
1/4 lb cellophane noodle
2 ounces dried lily buds , stems
1 -2 teaspoon cornstarch ( optional )
2 teaspoons sesame oil ( optional )
Monks Mixed Vegetable Ensemble, also known as Luohan Zhai, is a popular dish in Chinese cuisine. The dish was created by Chinese Buddhist monks who advocated for vegetarianism and wanted to use a variety of vegetables in their diet. The dish features a mix of traditional Chinese ingredients such as dried mushrooms and bean curd, as well as fresh vegetables like asparagus, carrots, and cabbage. The Monks Mixed Vegetable Ensemble is a great way to add more plant-based foods to your diet, and is sure to please vegetarians and meat-eaters alike.

Instructions

1.Soak the dried mushrooms for at least 2 hours or until soft.
2.In a pot of boiling water, blanch the asparagus for 2 minutes and the carrot slices for 1 minute. After blanching, rinse with cold water.
3.Drain the bean curd and cut into bite-sized pieces, then toss them in cornstarch.
4.Heat 2 tablespoons of oil in a wok over medium-high heat. Sauté the garlic until fragrant, then stir in the soybean paste and stir-fry for 30 seconds.
5.Add the cabbage, bamboo shoots, lily buds, and mushrooms and stir-fry for 2 minutes.
6.Add the vegetable broth, soy sauce, sesame oil, hoisin sauce, sugar, and sherry wine and stir-fry for 3 minutes.
7.Stir in the bean curd and cook for another 2 minutes.
8.Add the blanched vegetables and stir-fry for 1 minute, then add cornstarch if desired. Drizzle with sesame oil and serve hot.
