Ingredients

4 fresh red chile peppers , or to taste
1 tablespoon coriander seeds
1 teaspoon cumin seeds
1 teaspoon ground turmeric
1/2 teaspoon grated nutmeg
4 whole cloves
10 whole black peppercorns
6 fresh curry leaves
2 cloves garlic , crushed
1 teaspoon grated ginger root
1 tablespoon ghee ( clarified butter )
1 large onion , chopped
1 pound lamb meat , cut into small pieces
2 teaspoons salt
3 3/4 cups lamb stock
2 tablespoons tomato puree
1 large carrot , diced
1 large apple - peeled , cored , and diced
2 lemons , sliced
The Maharajah's Mulligatawny is a spicy soup that originates from South India and Sri Lanka. The soup is characterized by its unique blend of Indian spices and is traditionally made with chicken or lamb meat. Today, we made it with lamb meat for a rich and savory flavor. This soup is often served as an appetizer and is perfect for when you want something warm and comforting. It is best enjoyed with a slice of crispy baguette or garlic naan bread.

Instructions

1.Dry roast the chile peppers, coriander seeds, cumin seeds, turmeric, nutmeg, cloves, black peppercorns and curry leaves in a pan until fragrant.
2.After roasting add garlic, ginger root, and ghee (clarified butter) into the pan and stir for 2-3 minutes or until fragrant.
3.Add chopped onions and saute until caramelized, then add lamb meat and brown on all sides.
4.Add salt, lamb stock, tomato puree, diced carrot, and diced apple into the pot and bring to a gentle simmer for 1 hour.
5.Once the soup is cooked, blend it until it’s smooth, then strain it through fine mesh.
6.Serve hot in a soup bowl and garnish with fresh coriander leaves and sliced lemons.
