1/4 cup red wine vinegar ( plain vinegar is fine , too )
1 chicken bouillon cube ( vegetarian is fine , too )
1 1/4 tablespoons soy sauce ( low-salt )
2 tablespoons cornstarch
3/4 cup water
1 medium onion , chopped
1/2 cup green pepper , chopped

Instructions

1.Preheat oven to 350 degrees F (175 degrees C).

3.Arrange mandarin oranges on top of pork roast.
4.In a small saucepan, combine brown sugar, vinegar, bouillon cube, and soy sauce. Cook over medium heat, stirring constantly, until sugar is dissolved.
5.Pour mixture over pork roast and mandarin oranges.
6.Cover and bake for 2 hours, or until meat is tender.
7.Remove roast from pan and let rest while making gravy.
8.In a small bowl, dissolve cornstarch in water. Add cornstarch mixture to pan and cook over medium heat, stirring constantly, until gravy is thickened.
9.Add chopped onion and green pepper to gravy and cook until vegetables are tender and heated through.
