Ingredients

1 1/2 lbs boneless chicken , thighs cut in 8-10 pieces per thigh
2 cans hominy
1 large onion , chopped
1 poblano chiles or 1 bell pepper , chopped
1 carrot , chopped
4 garlic cloves
1 can El Pato salsa de fresco , green can
1 1/2 tablespoons of good quality chili powder or 1 1/2 tablespoons guajillo chilies , paste i made my self
2 tablespoons cumin
1 tablespoon Mexican oregano
1 teaspoon season salt or 1 teaspoon adobo seasoning , to taste
2 tablespoons masa harina flour or 2 tablespoons cornmeal , to thicken
3 cups chicken broth or 3 cups water

Instructions

1.In a large pot, add chicken, hominy, onion, poblano chiles, carrot, garlic, El Pato salsa de fresco, chili powder, cumin, Mexican oregano, and seasoning salt.
2.Pour in chicken broth or water until the ingredients are just barely covered.
3.Bring the pot to a boil, then reduce it to low heat and simmer until the chicken is cooked through, stirring occasionally.
4.After about an hour, remove the chicken from the pot and shred it then put chicken back in the pot.
5.In a small mixing bowl, whisk masa harina flour or cornmeal with 1/4-1/2 cup of cold water and stir mixture into pozole. Simmer the soup for 20 minutes and season to taste with additional salt if needed.
6.Serve hot with toppings such as shredded cabbage, sliced radish, diced onion, lime wedges, and cilantro leaves.
