Ingredients

3 tablespoons olive oil
1 3/4 cups onions , finely chopped ( I use a food processor )
1 can enchilada sauce ( I use the mild red sauce )
5 plum tomatoes , finely chopped ( I use a food processor )
1 1/2 teaspoons canned chipotle chiles , finely chopped ( I used canned chopped green chiles )
1 cup fresh cilantro , chopped
3 cups cooked turkey , shredded
2 cups monterey jack cheese , grated
3/4 cup sour cream
12 corn tortillas , 6-inch size

Instructions

1.Preheat oven to 350°F.
2.In a large skillet, heat 2 tablespoons of olive oil over medium heat.
3.Add onions and sauté for 5 minutes or until golden brown.
4.Add the enchilada sauce, canned tomatoes, and chipotle chiles. Cook for 5 minutes.
5.In a bowl, combine the cooked turkey, 1 cup of monterey jack cheese, cilantro, and 1/4 cup of sour cream. Mix well.
6.In a separate skillet, heat 1 tablespoon of olive oil. Add tortillas, one at a time, and cook for 15 seconds on each side until softened.
7.On a plate, spread 2 tablespoons of the enchilada sauce.
8.Transfer each tortilla to plate, spoon turkey mixture down center of each. Roll up tortillas and place seam side down in a baking dish.
9.Pour remaining enchilada sauce over enchiladas. Top with remaining cheese.
10.Bake for 20 minutes, until cheese is melted and bubbly.
