Instructions

1.Crush the digestive biscuits in a plastic bag with a rolling pin until you have fine crumbs.
2.Beat the egg yolks and sugar together until thick and pale.
3.Add the lemon juice and zest, creme fraiche, and cream and mix well.
4.In a separate bowl, whisk the egg whites until stiff peaks form.
5.Gently fold the egg whites into the cream mixture.
6.In a 23cm springform cake tin, sprinkle the crushed biscuits on the bottom. Pour the cream mixture over the top. Tap the tin gently on the counter to release any air bubbles.
7.Place the cake tin in the fridge for at least 6 hours to set.
