Ingredients

2 boneless skinless chicken breasts
32 ounces chicken stock
1 can whole kernel corn
1 can black beans
1 jar pico de gallo ( may use fresh pico de gallo or salsa fresca )
salt and pepper
cumin
chili powder
3 -4 ounces tortilla chips , crumbled
chopped chili pepper ( mild or hot )
fresh lime wedge
diced avocado
chopped cilantro
sour cream
shredded cheddar cheese or shredded monterey jack cheese
This chicken tortilla soup is a comforting and hearty dish that would be perfect in colder months, although it can always be enjoyed all year round. The base of the soup is chicken stock and black beans, making it a good source of protein and fiber. The spices, corn and fresh pico de gallo further enhance the flavors and add more nutritional values. Instructions

1.Begin by seasoning the chicken with salt, pepper, cumin and chili powder
2.Heat a large saucepan on medium-high heat. Add 1 tbsp olive oil
3.Once the oil is heated, add in the chopped chili pepper and cook for 1-2 minutes
4.Add the seasoned chicken and cook until browned, about 4 minutes on each side
5.In the same saucepan, pour in the chicken stock, pico de gallo, whole kernel corn, and black beans. Stir in 3-4 ounces crumbled tortilla chips
6.Bring it to a boil then turn the heat down to low to allow it to simmer for 20-25 minutes
7.Once done, remove the chicken and shred it. Return the shredded chicken to the saucepan to mix well with the soup.
8.Serve hot and garnish with chopped cilantro, diced avocado, sour cream, and shredded cheddar or monterey jack cheese. Squeeze fresh lime wedges on top before serving.
