The Deves Christmas Pudding is a classic British dessert that has been around since the 17th century. Originally, it was made with suet, dried fruits, and spices, and cooked in a cloth bag for several hours. Today, it has evolved into a recipe that contains many variations, but still includes many traditional elements. This pudding is typically served during the Christmas season, often flamed with brandy or rum and accompanied by custard, cream, or brandy butter. It is a rich, hearty dessert that is perfect for cold winter nights, family gatherings, and festive occasions.

Instructions

.In a large mixing bowl, cream together the butter and brown sugar.
.Add the eggs one at a time, mixing well after each addition.
.Stir in the jam and bicarbonate of soda.
.Roughly chop all the dried fruits and mix them into the butter mixture one at a time. Stir in the spice, salt, and breadcrumbs.
.Add the plain flour, self-raising flour, and rum to the mixture, combining well.
.Grease a 2-litre pudding basin and line the base with baking paper.
.Spoon the pudding mixture into the basin, pressing it down firmly.
.Cover the pudding with a layer of baking paper and a layer of foil, ensuring there is enough excess paper and foil to tie them together over the top of the basin.
.Place the basin in a large pot with enough water to reach halfway up the sides of the basin. Boil, then reduce to a simmer for 6 hours. Keep adding water as needed to the pot to keep the level up.
.Remove the pudding from the pot and hang in a cool, dry place for up to 3 months, or serve immediately in slices with your preferred accompaniments.
