Ingredients

3 lbs arm roast

1 carrot , chopped
1 leek , cleaned and chopped
1/4 celeriac , peeled and chopped or 2 stalks celery , chopped
1 small onion , chopped , about 1 cup
1/4 cup tomato paste
1 bay leaf
1 teaspoon whole allspice or 1/2 teaspoon ground allspice
1 teaspoon caraway seed
2 tablespoons sour cream ( optional )
1 tablespoon lemon juice ( optional )

Instructions

1.Preheat the oven to 325 F.
2.In a large Dutch oven, heat the butter over medium heat until melted, then add the arm roast.
3.Season the roast with salt, pepper, and paprika and brown on all sides.
4.Remove the roast and set it aside.
5.In the same Dutch oven, add the chopped carrot, leek, celeriac or celery, and onion and cook until softened.
6.Add the tomato paste, bay leaf, allspice, and caraway seed and stir to combine.
7.Return the roast to the Dutch oven and add enough water to just cover the roast.
8.Cover the Dutch oven and transfer it to the oven to braise for 2 to 2 1/2 hours, or until the meat is tender.
9.Remove the roast from the Dutch oven and let it rest for at least 10 minutes.
10.In a small bowl, mix together the sour cream and lemon juice, and serve on the side if desired.
