Ingredients

12 ounces self-rising flour
6 ounces grated beef suet or 6 ounces vegetable suet
1/2 teaspoon salt
cold water , to mix
1 1/2 lbs braising steak , trimmed of fat
2 tablespoons flour
1 tablespoon tomato puree
1 large onion , peeled and chopped
1/2 teaspoon dried herbs or 1 tablespoon chopped fresh mixed herbs
1 pint beef stock
salt
pepper

Instructions

1.Sift the flour and salt into a large bowl and mix in the suet. Add enough cold water to make a firm dough.
2.Roll out two-thirds of the pastry and use it to line a 2-pint pudding basin. Cut the steak into small pieces and toss in the flour. Layer the steak, onion, and herbs in the basin and season each layer with salt and pepper.
3.Mix the tomato puree with the stock and pour into the basin.
4.Roll out the remaining pastry to make a lid for the basin. Dampen the edges and press the lid firmly down to seal. Cover with a double layer of buttered foil.
5.Place the basin in a large saucepan and pour in enough boiling water to come halfway up the sides. Cover and simmer for 3 hours. Top up the water level as necessary.
6.Lift out the basin and remove the foil. Run a knife around the edge, place a serving plate on top and turn it upside down. Give the pudding a good shake before lifting off the basin.
