Ingredients

8 slices arnold 's light bread
4 ounces fat free cream cheese , room temperature
1 medium fuji apple
1 1/4 cups light vanilla soymilk
1 cup fat-free liquid egg substitute
2 tablespoons mrs. butterworth 's sugar-free pancake syrup
2 tablespoons brummel & brown light butter , melted
1/4 teaspoon cinnamon
The Big Apple French Toast Casserole is a twist on traditional French toast with a layer of sweet, juicy Fuji apple slices and a creamy, tangy cream cheese layer. Perfect for a lazy weekend brunch with friends or family, this casserole is easy to make and is a lighter, healthier alternative to traditional French toast that often uses white bread and lots of butter. By using Light bread, fat-free cream cheese, Light Vanilla Soymilk, and sugar-free pancake syrup, this casserole is lower in calories and fat without sacrificing flavor or decadence.

Instructions

1.Preheat your oven to 350°F (175°C) and lightly spray a 9x9 inch baking dish with cooking spray.
2.Cut 8 slices of Arnold's Light bread into cubes and evenly spread them out in the dish.
3.Cut the Fuji apple into thin slices and layer them on top of the bread cubes.
4.In a mixing bowl, beat the room temperature fat-free cream cheese until smooth. Gradually add in 1/4 cup of Light Vanilla Soymilk and continue to mix.
5.Pour the cream cheese mixture over the bread and apple slices.
6.In the same mixing bowl, whisk together the remaining 1 cup of Light Vanilla Soymilk, 1 cup of fat-free liquid egg substitute, 2 tablespoons of Mrs. Butterworth's Sugar-Free Pancake Syrup, 2 tablespoons of melted Brummel & Brown Light Butter, and 1/4 teaspoon of cinnamon.
7.Pour the egg mixture on top of the cream cheese mixture in the baking dish.
8.Bake in the preheated oven for 50-60 minutes or until the top is golden brown and the center is set.
9.Allow the casserole to cool for a few minutes before slicing and serving.
