4 eggs , beaten
200 ml milk
4 tablespoons sunflower oil

Instructions

1.Preheat the oven to 220°C/ gas mark 7.
2.Add a small amount of oil to each hole of a 12-hole muffin tin and place in the oven for 10 minutes.
3.Mix the flour, salt and pepper in a bowl, make a well in the center and add the beaten eggs.
4.Gradually whisk in the milk, making sure there are no lumps.
5.Once the oil is hot, carefully remove the muffin tin from the oven and divide the batter between the holes, filling them three-quarters full.
6.Return the tin to the oven and bake for 20-25 minutes until the puddings have risen and are golden brown and crispy on the outside.
