Ingredients

1 kg beef chuck steak
3 tablespoons coriander
1 tablespoon cumin
6 cloves
5 cm cinnamon sticks
1 1/2 teaspoons black peppercorns
2 teaspoons fenugreek seeds
1 teaspoon fennel seed
6 dried chilies , soaked
8 garlic cloves
1 large onion
2 1/2 cm piece fresh ginger
1/4 cup white vinegar
3 tablespoons ghee ( or a bit of oil )
2 bay leaves
2 cups beef stock
salt , but I do n't add it

Instructions

1.In a dry frypan, toast coriander, cumin, cloves, cinnamon sticks, black peppercorns, fenugreek seeds and fennel seed for 2-3 minutes or until aromatic.
2.Grind toasted spices to a fine powder and set aside.
3.In a blender, blend the soaked chillies, garlic, onion, ginger and vinegar to form a smooth paste.
4.Heat the ghee in a heavy bottomed pan and fry bay leaves for 10 seconds.
5.Add the blended paste and ground spices and fry for 10 minutes or until the oil separates.
6.Add in the beef and fry for a further 5 minutes.
7.Pour in the beef stock and bring to a boil.
8.Reduce heat, cover and cook for 1 1/2 -2 hrs on low heat until the meat is tender and the sauce is thick and rich.
9.Serve hot with basmati rice and naan bread.
