Ingredients

2 1/2 lbs round steaks , thinly sliced
4 tablespoons butter , divided
1 medium onion , chopped
1/2 lb ground veal
1/2 cup fresh rye breadcrumbs
1/4 cup chopped fresh parsley
2 tablespoons capers
1/4 teaspoon marjoram
1/4 teaspoon salt
1/4 teaspoon pepper
2 -3 tablespoons Dijon mustard
2 dill pickles , cut lengthwise into 8 strips
7 -8 slices bacon , cut in half
flour ( for dredging )
1 cup beef stock
1/2 cup dry red wine
1/2 cup tomato puree
1/2 cup sour cream ( optional )

Instructions

1.Preheat the oven to 350°F.
2.Lay the thinly sliced round steaks out on a work surface and pound with a meat mallet until they reach an even thickness.
3.In a skillet over medium-high heat, melt 2 tablespoons of butter. Add the chopped onion and cook until it becomes translucent, for about 3 minutes.
4.Add the ground veal, rye breadcrumbs, chopped parsley, capers, marjoram, salt, and pepper to the skillet and mix well to combine. Cook for 5-7 minutes or until the veal is fully cooked.
5.Spread Dijon mustard over one side of each steak and place one pickle strip and one slice of bacon on top of the mustard.
6.Divide the veal mixture into eight equal portions and spoon each portion onto the steak. Roll up each steak and secure the edges with toothpicks.
7.Dredge each rolled steak in flour and shake off any excess.
8.In a Dutch oven, melt the remaining butter over medium-high heat. Add the rolled steaks and brown on all sides.
9.Once browned, add beef stock, dry red wine, and tomato puree to the Dutch oven. Bring the mixture to a boil and then cover the Dutch oven with a lid.
10.Transfer the Dutch oven to the preheated oven and bake for 2 1/2 hours.
11.Remove from the oven and discard the toothpicks. If desired, stir in sour cream before serving.
