1/4 cup dried scallops
3 dried black mushrooms
1 1/2 cups uncooked short-grain white rice
1/2 leftover turkey carcass , broken into pieces
9 cups water
Toppings :
1 bunch fresh cilantro , chopped
1 bunch green onions , chopped
1/4 cup thinly sliced fresh ginger
1/4 cup raw peanuts
2 tablespoons dried red onion
8 dashes sesame oil
ground white pepper to taste
Thanksgiving Turkey Congee is a twist on the traditional Chinese recipe that's perfect for using up leftover turkey after the big holiday meal. Congee is also known as rice porridge or jook, and it's a staple comfort food in many Asian cultures. This recipe takes advantage of the turkey carcass to create a deeply flavorful soup base that's simmered with short-grain white rice, dried scallops, and black mushrooms until it becomes a thick, creamy texture. Instructions

1.Rinse the dried scallops and dried black mushrooms under running water and soak in warm water for 30 minutes.
2.In a large pot, combine the uncooked short-grain white rice, turkey carcass pieces, and 9 cups of water. Bring to a boil over high heat.
3.Reduce the heat to low and add in the soaked scallops, mushrooms, and the soaking water. Simmer the mixture for 1-1.5 hour, stirring regularly, until the rice has broken down into a smooth porridge-like consistency.
4.Remove the turkey bones, mushrooms, and scallops from the pot and discard. Stir in the toppings - chopped cilantro, green onions, thinly sliced ginger, peanuts, dried red onion, and sesame oil - and add ground white pepper to taste. Serve hot.
