Instructions

1.Preheat the oven to 200°C.

3.Cook the soba noodles according to the package instructions, then drain in a colander and rinse with cold water. Toss with 1 tablespoon of sesame oil to prevent sticking.
4.In a large skillet over medium-high heat, sauté the snow peas and red pepper in the remaining sesame oil for 1-2 minutes until crisp-tender. Toss with sesame seeds and season with salt and pepper. Transfer to a serving bowl.
5.Pound the veal scaloppini to 1/4 inch thickness using a meat mallet. Dip each piece in the beaten egg, then roll in the chopped peanuts to coat.
6.In the same large skillet, heat the peanut oil. Working in batches if necessary, cook the veal until browned, 1-2 minutes per side. Transfer the veal to a baking dish and bake for an additional 5-7 minutes.
